Hot Cross Buns Recipe (Soft, Spiced & Fruity)

🧂 Ingredients

Dry Ingredients

  • 4 cups (500 g) all‑purpose or bread flour
  • ½ cup (100 g) sugar
  • 2 tsp ground cinnamon
  • ½ tsp nutmeg
  • ½ tsp allspice (optional)
  • 1 tsp salt
  • 2 ¼ tsp instant yeast (1 packet)

Wet Ingredients

  • 1 ¼ cups (300 ml) warm milk
  • 1 large egg
  • 60 g softened butter
  • 1 tsp vanilla
  • Zest of 1 orange (optional but recommended)

Fruits

  • 1 cup (150 g) raisins, sultanas, or mixed dried fruit
  • Optional: 2–3 tbsp chopped candied peel

Cross-paste

  • ½ cup (60 g) flour
  • 5–6 tbsp water (adjust until pipeable)

Glaze

  • 3 tbsp sugar
  • 3 tbsp water
    (OR warm apricot jam)

🥣 Step‑by‑Step Method

1. Prepare the Dough

  1. In a mixing bowl, combine flour, sugar, spices, salt, and yeast.
  2. Add warm milk, egg, vanilla, and orange zest.
  3. Mix until a dough forms.
  4. Add softened butter and knead 8–10 minutes until smooth and elastic.
  5. Add dried fruits and knead gently to incorporate.

The dough should be soft, slightly sticky, and very fragrant from the spices.


2. First Rise

  • Cover and let rise for 1–1.5 hours, or until doubled in size.

3. Shape the Buns

  1. Punch down the dough.
  2. Divide into 12 equal pieces (~80–85 g each).
  3. Shape into smooth balls and place them on a greased or lined tray.
  4. Leave small gaps—they should touch slightly after proofing.

4. Second Rise

  • Cover and let rise for 30–45 minutes, until puffy.

5. Pipe the Crosses

  1. Mix flour and water into a thick paste.
  2. Fill a piping bag.
  3. Pipe a continuous straight line across each row of buns, then the other direction—forming crosses.

6. Bake

  • Bake at 180°C (350°F) for 20–22 minutes until golden brown.

7. Glaze

  1. Heat sugar + water until dissolved.
  2. Brush the hot glaze over warm buns for shine and flavor.
  3. Cool completely before serving.
