Chorba: A Hearty Ramadan Soup to Nourish Body and Soul

Ingredients
- 250g lamb or beef, cubed
- 1 onion, finely chopped
- 1 tbsp tomato paste
- 1 large tomato, grated
- ½ cup chickpeas (soaked overnight)
- ½ cup vermicelli or small pasta
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp black pepper
- Salt to taste
- 1 tbsp olive oil
- 1.5 liters water or broth
- Fresh cilantro and lemon wedges for garnish
👨🍳 Instructions
- Sauté the Base: In a large pot, heat olive oil. Add chopped onion and meat. Cook until browned.
- Add Tomatoes & Spices: Stir in tomato paste, grated tomato, cumin, paprika, pepper, and salt. Cook for 5 minutes.
- Simmer: Add chickpeas and water. Cover and simmer for 45–60 minutes until meat and chickpeas are tender.
- Finish with Pasta: Add vermicelli and cook for 10 more minutes.
- Garnish & Serve: Ladle into bowls, top with fresh cilantro and lemon wedges.
