Chicken Biryani Recipe

Ingredients:

  • 500g chicken (cut into pieces)
  • 2 cups basmati rice (washed & soaked 20 min)
  • 1 cup yogurt
  • 2 tbsp ghee or oil
  • 3 garlic cloves, minced
  • 1 tbsp ginger paste
  • 2 onions, sliced
  • 2 tomatoes, chopped
  • 3 cups chicken stock or water
  • 2 green chilies, slit
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tsp garam masala
  • 1 tbsp biryani masala
  • Fresh mint & cilantro
  • Saffron (optional)
  • Salt to taste

Step-by-Step Instructions:

  1. Marinate the Chicken:
    Mix chicken with yogurt, garlic, ginger, green chilies, turmeric, cumin powder, coriander powder, and salt. Let it marinate for 1 hour.
  2. Cook the Onions:
    Heat ghee in a pot. Fry onions until golden brown. Remove half for topping.
  3. Build the Masala:
    Add tomatoes, biryani masala, and garam masala. Cook 5 minutes.
  4. Add Chicken:
    Add marinated chicken and cook until half done.
  5. Add Rice:
    Add soaked rice and chicken stock. Mix gently and simmer 20 minutes covered.
  6. Dum Cooking (Optional):
    Seal pot with foil and lid. Cook 10 minutes on low heat for authentic biryani flavor.
  7. Serve:
    Fluff rice, top with fried onions, mint, cilantro, and saffron milk.
