Chicken Biryani Recipe
Ingredients:
- 500g chicken (cut into pieces)
- 2 cups basmati rice (washed & soaked 20 min)
- 1 cup yogurt
- 2 tbsp ghee or oil
- 3 garlic cloves, minced
- 1 tbsp ginger paste
- 2 onions, sliced
- 2 tomatoes, chopped
- 3 cups chicken stock or water
- 2 green chilies, slit
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 tsp garam masala
- 1 tbsp biryani masala
- Fresh mint & cilantro
- Saffron (optional)
- Salt to taste
Step-by-Step Instructions:
- Marinate the Chicken:
Mix chicken with yogurt, garlic, ginger, green chilies, turmeric, cumin powder, coriander powder, and salt. Let it marinate for 1 hour. - Cook the Onions:
Heat ghee in a pot. Fry onions until golden brown. Remove half for topping. - Build the Masala:
Add tomatoes, biryani masala, and garam masala. Cook 5 minutes. - Add Chicken:
Add marinated chicken and cook until half done. - Add Rice:
Add soaked rice and chicken stock. Mix gently and simmer 20 minutes covered. - Dum Cooking (Optional):
Seal pot with foil and lid. Cook 10 minutes on low heat for authentic biryani flavor. - Serve:
Fluff rice, top with fried onions, mint, cilantro, and saffron milk.
